Quakers are considered an essential defect in the coffee classification scale.

Derived from uncooked green coffee berries, after processing will leave “young” or underdeveloped, disconucleed, or deformed seeds. Quaker’s seeds may not grow as thoroughly as other standard particles during roasting, so they remain bright after roasting. When ground with average seeds, Young Kernels will taste like peanuts.
