What is Wet Polished Processing in Green Coffee Beans? What is Wet Polished Processing?

Wet Polished Processing is the method of coffee production in which green coffee beans in the polishing process are fed into a high-pressure pump system that continuously sprays mist to create mutual friction in the beans. This rubbing will peel off the remaining silk on the coffee and make the surface of the coffee beans more shiny and beautiful. The polishing process also reduces the total volume of coffee by 1-2% and requires post-friction cooling technology to ensure coffee quality.

Coffee Polishing Technology

No matter how it is designed, the principle of polishing coffee beans has never changed: to make the coffee beans rub against the honeycomb structure inside the machine with the steel knife board—mounted on both sides. While spinning and running from the inlet to the outlet, the coffee must rub against these steel devices to peel off the silk skin while the rubbing also makes the coffee shiny.

The forced rubbing causes the coffee breakage rate to increase relatively after polishing, so these dry polishing machines are gradually being phased out, especially when buyers demand a high degree of polish. Must reach over 90%, have to polish twice to reach this level, and of course, the breakage rate (about 4-5%) increases, causing the loss to rising (about 2-3%).

Later in the world, manufacturers developed wet polishing machines that solved the above disadvantages satisfactorily. Still, new problems arose because this technology had to give the coffee a “bath” with water first to peel off the silk easily, then polish, so the amount of water discharged into the environment makes manufacturers have to face environmental protection agencies and people living around the area complaining, that Not to mention it takes a lot of energy and fuel to re-dry the coffee that has been bathed in water.

Another line of machines with German technology developed simultaneously with the wet coffee polisher, but using mist technology before being put into polishing seems to have solved the disadvantages of the two lines. As mentioned, the automatic misting system will work with a relatively simple way of putting coffee in a barrel. The coffee will be stirred forever for about 1 hour in a mesh barrel. Coffee rubbing against each other and rubbing against the blades also makes the ball rise. Still, this way also has a disadvantage in that it takes a lot of energy, but the yield is only about 500kg/hour with a loss of about 2% and broken and increased by about 2.5%. Looking at the waste dust bin, we can see a lot of small batches of broken coffee mixed in it.

In addition, the efforts of many domestic technologists to manufacture coffee machine equipment have applied advances in other industries to coffee polishing technology, such as polishing machines using a combination of iron. and misting before polishing. Still, the breakage rate is also too high and the energy used is too large, about 100kw for a capacity of about 800kg/h and often have to change the hitting charge.

An attempt to create a line of machines that can overcome all of the above shortcomings often seems like giving up, but with perseverance and many years of experience in the industry. And especially the meagre lead loss rate at 1.1-1.2% released in the dust container and silk shell, the increased breakage rate after polishing is only 0.2-0.4%; the total power consumption is at 30kw/h, the machine productivity is 750kg-800kg/h. Together with the instant cooling machine, the coffee does not change colour or become silver after a long time of storage.

The machine is controlled by a touch screen (Touch Screen), and the PLC system automatically controls the process of starting and stopping the device, which is easy to operate for workers.
