Spreading coffee on the yard and allowing it to dry naturally in the sun is the most frequent dry processing method, also known as “Natural processing“ or “Dry process” The hard outer shell will be milled when it has dried leaving the coffee bean for roasting.
This method has the benefit of being simple to implement and requiring little equipment.
Cons: Because the entire fresh coffee is dependent on “sunshine,” the drying time is extended, making it easier to create uneven moisture content in the grain mass during drying, allowing bacteria and molds to proliferate. Contamination occurs in the bean mass, resulting in a decrease in the flavor of the coffee when consumed.
